Using Apple Pay at online casinos

The rules of the card underneath still apply. A credit card added to the wallet is still a credit card, so it is declined for gambling in Great Britain, and a gambling block set in your banking app blocks the Apple Pay payment as well. The token only changes how the card is presented, not what it is allowed to do.
Getting money out
The operator pays you on a different rail. In practice that is a refund to the card sitting behind the wallet, or a bank transfer if the card cannot receive payouts, and either route takes one to three banking days after approval. This is the single most common surprise for players who fund an account exclusively with a phone wallet.
